eBOS at the Final Plenary and Event of the THEROS Project

On 1 and 2 December 2025, eBOS Technologies Ltd. participated in the 5th and Final Plenary Meeting and the Final Event of the THEROS project, both held in Athens in hybrid format and organised by ICCS and SEAB. The events gathered all 17 consortium partners to review the project’s final achievements and showcase the THEROS integrated toolbox supporting authenticity, transparency and trust in organic and geographic indication (GI) food supply chains.

eBOS was represented by Dr. Marilena Paraskeva, R&D Project Manager, and Mr. Epifanios Chatzievangelou, Software Development Manager.

The project, titled “An integrated toolbox for improved verification and prevention of adulterations and non-compliances in organic and geographical indications food supply chains,” has developed an advanced toolbox designed to modernise the verification and prevention of food adulteration. This toolbox enhances traceability, security, and transparency using cutting-edge technologies such as Earth Observation, IoT, photonics, DNA metabarcoding, blockchain, AI/ML, and digital product passports. The THEROS solution ensures interoperability with existing systems, facilitates standardised data sharing, and supports stakeholder adoption to improve decision-making processes across the food supply chain.

The final plenary session, held on 1st December, focused on presenting the project’s key achievements and exploitation activities. It included an overview of THEROS’s journey, discussions on market-entry preparation plans, and pilot demonstrations of the THEROS methodology in preventing food adulteration across various sectors. Key presentations also highlighted the integration of technologies like satellite intelligence, photonic sensors, and IoT networks, which have been pivotal in ensuring the transparency and authenticity of food chains.

The final event, held on 2nd December, showcased a series of expert-led sessions, providing a deep dive into how THEROS is transforming organic and geographical indication food supply chains. The event featured insights into various smart technologies for monitoring and verifying food quality, such as DNA intelligence for food authenticity and sustainability, while also highlighting other European projects contributing to trusted food systems. The event concluded with discussions on harnessing these technologies to tackle food fraud and elevate industry standards.

eBOS has played an essential role in the project, contributing to the development of the Human-Machine Interface (HMI) for the THEROS toolbox, the Green Accountability Tool, which enables policymakers and supply chain actors to monitor activities and make informed decisions. By applying AI/ML, eBOS has also facilitated the verification of food origin and quality using DNA footprints. As the Quality Assurance and Risk Manager, eBOS ensured the implementation of quality procedures and proactive risk mitigation. Additionally, eBOS led the exploitation activities, developed market-entry strategies, created sustainability plans, and shaped business models to commercialise and promote the project’s Key Exploitable Results (KERs).

As THEROS concludes, eBOS remains committed to enabling secure, transparent and trustworthy food supply chains across Europe.
